Pak choi, also known as bok choy and Chinese chard, is a type of chinese brassica. It produces superb, mild tasting, crisp, succulent greens with white stems and dark green leaves, perfect for stir frying.

Tatsoi is a rosette of Pak Choi with broad round glossy green leaves.

Sprinkle seeds thinly, approx 2cm(¾ in) deep in rows 15cm leaving 10cm between plants. The wider distance is best for semi-mature to full-size heads.

Gradually thin seedlings to 7.5-10cm (3-4in) for baby leaf, to 20cm (8in) for semi-mature plants and to 25-30cm (10-12in) for mature plants. The thinnings can be eaten.

Earlier and later sowings for baby leaf can also be made under cloches or fleece in mild areas. Tatsoi is fast-growing and can be cut 3 to 4 weeks after planting. Succession planting with give you a longer season. Plants are very cold tolerant but atsoi will not survive a heavy frost.
