Scorzonera is a perennial root vegetable that produces long black roots with white flesh, usually grown as an annual.
Also known as black salsify, black oyster plant, serpent root, viper's herb and viper's grass.
It is eaten and grown commercially in europe but is relatively unheard of in Britain.
It has a crisp and crunchy texture with a delicate, oyster type flavour similar to that of salsify.
Scorzonera is easy to grow and the roots can be left in the ground all winter. In fact, if left in the ground for a second season the roots will grow much bigger and are still very tasty.

It does well with rich, deep, stone free soil but will grow in most soil types.
VRN Enorma is a long, heavy-yielding variety with excellent flavour and good resistant to bolting.
Sow the seeds March - May, direct into well-prepared soil. Plant 2 or 3 seeds 1.5cm deep every 15cm with 20cm between rows. Thin to the strongest plant.
Harvesting the roots can sometimes be difficult to dig out without breaking because they are so long.
