Corn Salad (Valerianella locusta) also known as Mache and Lamb’s Lettuce amongst other names is a small, dark green, leaf vegetable with a nutty flavour and soft texture.

It is a very hardy annual and is a very useful and loved winter salad.

 

Vit is a vigorous variety used for winter, spring and autumn crops. It has clearly veined leaves, has a distinct minty flavour and is resistant to powdery mildew.

 

Sow 0.5cm(¼ in) deep in rows 15cm (6 in) apart. Thin to approx 10 cm apart.

Plants can also be sown in pots which helps to keep the leaves clean.

Winter crops should be under a cloche, fleece or in a polytunnel.

 

Harvest by picking a few leaves from each plant to keep them producing more leaves.
